Asian mushrooms such as shiitake and maitake have traditionally been eaten to increase longevity. They provide an excellent source of selenium and polysaccharides along with iron, protein, fibre and vitamin C. Studies suggest that compounds in maitake and shiitake have anti-cancer, antiviral and immune-boosting effects. Maitake appears to help prevent tumor growth and shiitake contains eritadenine, a substance that lowers cholesterol levels. Other varieties such as portobello have healing properties too. They’re a source of the mood-enhancing B vitamins including niacin, riboflavin, thiamine and pantothenic acid and also rich in copper, protein, and fiber. Tip: It’s important to cook mushrooms before eating them to destroy the small amount of natural carcinogens they contain.
